Boerenkool - Mashed Potatoes and Kale

Description:
Boerenkool pronounced "booren-kohl" (a Dutch word which means Farmer's Cabbage. This a recipe for Mashed Potatoes and Kale. The absolute best way to eat KALE! Even your kids will LOVE this one.

Traditionally this is served with sausages or meatballs and gravy in the Netherlands, but I'm quite "anti-nitrites" now and so vegetarians can improvise with ground-round (tofu) meatballs etc and pour some Udo's oil on top instead of gravy. I warn you you're be asked to make it again and again.


Ingredients:
Your favorite mashed potatoes
One onion add to cooking water
Water for cooking potatoes (keep cooked water)

Add a dash of nutmeg
A dash of Braggs Liquid Aminos
A pressed clove of raw garlic

VERY finely chopped Raw and fresh Kale (3 or 4 or more leaves)


Directions:

Make your favorite mashed potatoes. (I like adding an onion in with the potatoes while cooking.
Then when mashing, instead of butter I don't use any, and use the cooking water instead of milk or just use a little bit of goats milk (if you like goats milk)
Add a dash of nutmeg, some Braggs Liquid Aminos, and a pressed clove of raw garlic. Mash well

Add VERY finely chopped RAW kale to this (I like lots and use a whole bunch -3 or 4 leaves).

Granola with Wheat Germ, Seeds and Blackstrap Molasses

Description: The advantage of making your own healthy homemade granola is that you can avoid some of the hydrogenated fats and corn syrup found in many of the commercial brands. Granola made this way is also a heart-healthy snack food because of the relatively low fat content and the vitamins and minerals supplied by the grains, seeds, nuts and fruits. Oats and other grains are rich in magnesium and other minerals and vitamins which help keep cholesterol low. This recipe I like because of the blackstrap molasses. Blackstrap molasses is a very good source of iron. Particularly for menstruating women, who are more at risk for iron deficiency, boosting iron stores with blackstrap molasses is a good idea--especially because, in comparison to red meat, a well known source of iron, blackstrap molasses provides more iron for less calories and is totally fat-free. Iron is an integral component of hemoglobin, which transports oxygen from the lungs to all body cells, and is also part of key enzyme systems for energy production and metabolism.
So, granola can be a quite healthy as part of a diet rich in natural grains and vegetables - and as a welcome treat for when you are working or playing extra hard.
