Banana Chocolate chip muffins

Description:
This is abit of a twist on the tradional banana muffin.
With the added protien from the quinoa and fibre from the oatmeal it makes a great healthy snack that will satisfy you between meals.

This recipe also uses spelt. Spelt is a grain similar to wheat whose origin dates back to approximately 5000 B.C., from the Mediterranean and Middle Eastern region. Italians have been consuming it for a long time under the name of "farro," and Germans have been calling it "dinkle." Making a comeback in the U.S., spelt may be a nutritious alternative for those with wheat allergies. Spelt flour is rich in fiber. Due to its higher water solubility, spelt flour is more easily digested than wheat. Spelt has a higher protein content than those made of wheat.


Ingredients:
1 cup of spelt flour
1/4 cup of bran or flax flakes
1/4 cup of quinoa flakes
1/2 cup oats
1/4 cup raw sugar
1tsp baking soda
2 tsp baking powder
1/2 cup melted butter
1/4 cup milk or almond milk
2 eggs
1 tsp vanilla
3 ripe bananas - mashed
1/2 cup of chocolate chips


Directions:
Mix all dry ingredients together into a bowl. In a seperated bowl mix all wet ingredients. Pour wet ingredients into dry and mix, then add chocolate chips and mix.
Spoon into lined muffin tins. Bake for 20 mins at 375 degrees C and enjoy!


Servings: 12


Notes: If you are trying to eliminate sugar then switch the sugar content for applesauce and add 2 tablespoons extra of quinoa flakes. * This is a remake of a recipe that came from my sons elementary school

Chocolate Avocado Pudding (Paleo,Vegan)

Have you heard of chocolate avocado pudding? Have you wondered if it would actually be good? Recently I noticed we had a few extra ripe avocados, I decided to give it a whirl. Literally. In my new blender. I didn’t have a recipe, I just pulled a few ingredients out and blended them up, and surprise! Chocolate avocado pudding is good. Very good, actually.

It looks just like regular chocolate pudding, and you can’t taste the avocado, it just adds a really nice creaminess. And of course it adds some nice nutritional benefits as well, like lots of good, healthy fats.
Dessert without the guilt.

Some tips about this chocolate avocado pudding:

You do need to make sure that the avocado is perfectly ripe. An under ripe avocado won’t work, because it won’t be able to be blended down into a creamy consistency, and an overripe avocado also won’t work, because it won’t taste good.
You need the avocado to be just right. No brown spots or streaks inside – don’t try it – it won’t work!
If you taste the pudding, and you think it needs more sweetener, or more cocoa, go ahead and add some. Use your own judgement.
