Parsley is an excellent digestion restorative remedy. It improves the digestion of proteins and fats, and because of its high enzyme content, parsley benefits digestive activity and elimination. It also helps cleanse the liver of toxins and rejuvenates it. If that weren’t enough, parsley is also high in B12, chlorophyll and essential fatty acids- and helps balance hormones in women! Now I bet you think of parsley as more than that a dinky garnish you push to the side of your plate.
Ingredients: 1 bunch cilantro 1 bunch parsley 2 scallions (green onions) ½ pint cherry tomatoes 1 Tbsp agave syrup 1 avocado (diced) 1 cup raw almonds (soaked or un-soaked) 1 lemon juiced 1 Tbsp olive oil 1 tsp salt
Directions: Take cilantro and parsley leaves off of stems and rinse and spin dry.
Chop and add green onions, tomatoes and avocado.
Food process almonds until fine. Add to vegetables.
In small bowl mix lemon juice, oil, salt and agave and pour over vegetables and mix.

The proportions vary by manufacturer. Thyme usually dominates the taste produced by the herb mixture. Lavender is only added in American mixes but is not used in French traditional mixes. Herbes de Provence are used to flavour grilled foods such as fish and meat, as well as vegetable stews. The mixture can be added to foods before or during cooking or mixed with cooking oil prior to cooking so as to infuse the flavour into the cooked food. They are rarely added after cooking is complete.
