Sugar Free Muffins

Description:
These are great if you need to have a sugar free diet. Add any kind of fruit you like. If you have a favourite muffin flavour, try that. It is a very flexible recipe.
You can adjust this recipe to other flavour variations such as:
Carrot Cake
Apple Cinnamon
Rhubarb
Strawberry Rhubarb
Fruit Muffins

Ingredients:
¼c oil
2 eggs
1c sour milk (any kind)
2c GF Baking Mix
2 tsp xanthan gum
1 Tbsp baking powder
1 tsp baking soda
½ tsp salt
*Sweetener*

*Choose one of the following:
2 Tbsp honey or maple syrup
¼ c apple sauce or date paste
½ c mashed banana


Directions:
In bowl of mixer combine oil and eggs and beat until fluffy. Stir in milk and sweetener of choice. Mix well. Add flour, xanthan, baking powder, soda and salt. Beat well. Add fruit if using and mix. Divide between 12 muffin cups Bake at 350° for 28 - 30 minutes until tester inserted in center comes out clean. Cool completely on wire rack. Muffins can be frozen. Reheat in the microwave.

Flavour variations:

Carrot Cake
1 carrot finely grated
¼ c crushed pineapple (opt)
¼ c raisins washed in hot water
¼ c walnuts or pecans (opt)
½ tsp cinnamon
¼ tsp nutmeg

Apple Cinnamon
1 medium apple grated
½ tsp cinnamon

Rhubarb
1c chopped rhubarb
1 tsp cinnamon

Strawberry Rhubarb
½ c chopped strawberries
½ c chopped rhubarb
½ tsp cinnamon

Fruit Muffins
1c fresh or frozen fruit of your choice
Strawberry
Raspberry
Cherry – add ¼ tsp almond extract
Apricot
Pear
Plum
Blueberry
*you may want to chop larger fruits
