Greetings

Hope you all had a wonderful Summer and are ready to welcome in a beautiful Autumn and Gaia's bountiful harvest. Today we went to our local farmers market to pick up some local Jalapenos and peppers for some canning later today.  Farmers markets are a great way to buy fresh local products, support your local farmers and get out and meet your community. 

Whats New!

Well, this week we launched our brand new Greek Islands Tour for October 2019. In just one week, it is already half full. I am so excited to be joining this wonderful group of like-minded people as we explore and travell together around the Islands. We also have one Sacred Ireland Tour coming up in March, during the St. Patrick's Day week. What a lovely time to be in Ireland. If you have always dreamed of visiting the Emerald Isle or Greece, contact Maria Carr for more details.

Fall Apples with Caramel and Walnuts

Description:
The proverb "An apple a day keeps the doctor away.", addressing the health effects of the fruit, dates from 19th century Wales. Well here is a way to keep the kids eating this amazing fruits. Research suggests that apples may reduce the risk of colon cancer, prostate cancer and lung cancer. Compared to many other fruits and vegetables, apples contain relatively low amounts of vitamin C, but are a rich source of other antioxidant compounds. The fiber content, while less than in most other fruits, helps regulate bowel movements and may thus reduce the risk of colon cancer.


Raw Tomato Soup

Description:
For lunch enjoy a lovely fresh tomato soup. If you wish, you can warm it on your stove, but don’t heat over 105 degrees F. or you will destroy enzymes. Did you know that tomatoes do not have to be a deep red color to be an outstanding source of lycopene? Lycopene is a carotenoid pigment that has long been associated with the deep red color of many tomatoes. A small preliminary study on healthy men and women has shown that the lycopene from orange- and tangerine-colored tomatoes may actually be better absorbed than the lycopene from red tomatoes. That's because the lycopene in deep red tomatoes is mostly trans-lycopene, and the lycopene in orange/tangerine tomatoes is mostly tetra-cis-lycopene. In a recent study, this tetra-cis form of lycopene turned out to be more efficiently absorbed by the study participants. While more research is needed in this area, we're encouraged to find that tomatoes may not have to be deep red in order for us to get great lycopene-related benefits. Tomatoes are widely known for their outstanding antioxidant content, including, of course, their oftentimes-rich concentration of lycopene. Researchers have recently found an important connection between lycopene, its antioxidant properties, and bone health.

Question:
Does Vitamin D help me prepare for preventing the Winter Blues and the Flu?

Answer:
In northern climates vitamin D deficiency is common due to the fact that the sun’s rays are angled to such an extent that the UVB portion of these rays is filtered out. The UVB rays stimulate the biological production of active Vitamin D, D3. Although, in the summer a person produces about 20 000 IU of vitamin D in just 20 minutes, in the Canadian winter we produce virtually none, even if we do expose our skin to the sun (not likely!).

So how does this affect us?

Seemingly the effect is significant according to some recent research. Vitamin D deficiency has been linked to a myriad of health problems which occur more routinely in the winter than any other season or which occur more readily in Northern climates in general.

For instance, viral and bacterial infections including the Flu occur more in the winter. It has been discovered that Vitamin D turns on genes that boost production of antimicrobial peptides called cathelicidins which destroy viruses, bacteria, and other germs.

Low vitamin D levels are also associated with an increased risk of cancer, seasonal affective disorder (SAD), osteoporosis, rickets, multiple sclerosis, high blood pressure, metabolic syndrome, diabetes, and obesity. In elderly people this deficiency is linked with weakness, an increased chance of developing macular degeneration, and a 2.5 times increased risk of death.

Testing is available to determine your Vitamin D status. Recommended supplemental intake during fall and winter is 1000-2000iu per day of vitamin D3. Dietary sources of active vitamin D are scarce and include some fatty fish (herring, salmon, sardines), fish liver oils, eggs from hens that have been fed vitamin D, and fortified milk and infant formulas. Other dairy products such as cheese and yogurt are not usually fortified with vitamin D.
