Lisa's Easy Lentil Salad

Description:
Makes a great side dish or scooped onto organic tortilla chips as an appetizer. Lentils have a very long association with mankind, as it is believed that these pulses have been included in human diet since Neolithic times. According to historians, lentil plants are among the first domesticated ones in the near East (countries of Western Asia between the Mediterranean Sea and Iran), which is believed to be the place of origin of these plants. The color of lentils range from yellow, red and green to brown and black. Most varieties of white, red and yellow lentils are sold after removing their seed coat (decorticated forms). Lentils are rich in protein, with over 25% of lentils nutritional value being protein. This makes lentils the most popular and inexpensive source for protein, especially for those, who cannot afford meat and for vegetarians. Apart from proteins, lentils have essential amino acids, dietary fiber, folate, other vitamins and minerals. 200 grams of cooked lentils contain 18 grams of protein, 40 grams of carbohydrates, 15 grams of dietary fiber, 4 grams of sugar and 138 grams of water. Calorie content in lentils is around 230 (for 200 grams of cooked lentils).

Mexican Vegetable Bake

Description:
Turn a tray of roasted vegetables into a spicy meal by adding kidney beans, a tomato sauce and a cheesy topping. This should prove a popular dish for teenaged vegetarians and is great served with warmed soft tortillas. It also uses garlic, pepper, fennel bulb, zucchini, and artichoke hearts.

Chocolate, Tofu & Spelt Cupcakes

Description:
Chocolate has had some good press recently for its health benefits, but many people seem confused as to what types of chocolate are good for them and why. Reports on the antioxidant potential of chocolate have been coming out for the past few years. Cornell University published a study in late 2003 that tested pure coca powder for amounts of phenolic phytochemicals or flavonoids that fight free radicals in the body. The two flavonoids measured were gallic acid equivalents (GAE) and epicatichin equivalents (ECE). A single serving of coca delivered 611mg of GAE and 564mg ECE, twice the number found in a glass of red wine. While the actual coca or cacao found in chocolate is good for you, it is important to look at the ingredients. Milk chocolate usually only contains 10% coca solids, filling up the rest of the bar with things that might not be so good for you like sugar, dairy, and preservatives. Anything labeled dark chocolate must contain a minimum of 35% coca solids, but there are plenty of companies that produce premium chocolates that reach from 70-80%. At first this chocolate may taste bitter, but once you try it, you will never go back! As food writer and chef Jennifer Harvey Lang said: “dark is to milk chocolate what Dom Perignon is to Dr. Pepper.” Why is something that is so good for you so addictive? I haven’t met a lot of people with uncontrollable broccoli cravings. Chocolate has another interesting component called phenylethylamine (PEA), which is a chemical that speeds up the flow of information between nerve cells: dopamine and norepinephrine, chemical cousins of amphetamines. Dopamine makes us feel good and norepinephrine stimulates the production of adrenaline, making our heartbeat faster. This is the same combination that goes coursing through our bodies when we meet someone new and the “chemistry is right”. We get that same chemistry from chocolate. The Aztecs believed that cacao stimulated desire, and chocolate has long been a favourite gift for lovers for exactly this reason.

Dear OK In Health
My toddler finds it hard to go to sleep. Do you have any tips or maybe some essential oils I might use?
Eva M

Hello Eva
This month we do have an excellent articles that might interest written by Alexis Costello from Happy Holistic in Kelowna. Alexis writes about...

“Lavender oil is one of the most popular choices for aromatherapy worldwide and for good reason. Antibacterial and antifungal, it can be used on rashes, hives, scrapes or burns. Emotionally, lavender has a calming effect, but too much can actually have the opposite affect and be over-stimulating, so stick to a drop or two for babies. For our baby boy, we have a teddy bear with a heating pack inside that I will often put 3 or 4 drops of lavender oil on before inserting back into the bear. The combination of a favourite toy, soothing warmth and calming lavender is perfect for sending an overtired darling off to sleep. Roman chamomile is another essential oil that is safe for babies and can help make life a little smoother.....”.

JOHN O' DONOHUE, Ph.D.,
Irish teacher and poet, has been widely praised for his gift of drawing on Celtic spiritual traditions to create words of inspiration and wisdom for today. He was born in County Clare in 1956. He spoke Irish as his native language and lived in a remote cottage in the west of Ireland until his untimely death in January 2008. This month we highlight two of his books.

ANAM CARA: A Book of Celtic Wisdom Paperback – by John O'Donohue - ISBN 9780060929435
In Anam Cara, Gaelic for "soul friend," the ancient teachings, stories, and blessings of Celtic wisdom provide such profound insights on the universal themes of friendship, solitude, love, and death as:
Light is generous
The human heart is never completely born
Love as ancient recognition
The body is the angel of the soul
Solitude is luminous
Beauty likes neglected places
The passionate heart never ages
To be natural is to be holy
Silence is the sister of the divine
Death as an invitation to freedom

TO BLESS THE SPACE BETWEEN US: A Book of Blessings - by John O'Donohue ISBN 9780385522274

In To Bless the Space Between Us, his compelling blend of elegant, poetic language and spiritual insight offers readers comfort and encouragement on their journeys through life. O’Donohue looks at life’s thresholds—getting married, having children, starting a new job—and offers invaluable guidelines for making the transition from a known, familiar world into a new, unmapped territory. Most profoundly, however, O’Donohue explains “blessing” as a way of life, as a lens through which the whole world is transformed. O’Donohue awakens readers to timeless truths and shows the power they have to answer contemporary dilemmas and ease us through periods of change.

EVENT SURVEY QUESTION:

Last June we hosted the 1st annual Okanagan Angels and Fairies Fair in Penticton. There were vendors and practitioners in from our three western provinces. The was a day full of Angel and Fairy talks, acquainting people with the possibilities of working with their Angelic Guides and Fairies Folk. It was a magical day, the energy was clear, playful, and Angelic. The public loved the talks, the vendors, and many took advantage of the Angel Card Readings, Fairy reading, Intuitive reading and many other readers, and practitioners that were present for the day. It is with great anticipation that we look forward to next year, as many people left the day asking when it was going to happen again!.

SO OUR QUESTIONS ARE:

Would you like to attend next June?

Would you be interested in a Saturday only?

or Saturday and Sunday?

Are you interested in a booth? one or two days?

We would love to hear back from you!

November 2014

Tip of the Month:

The October 23rd Solar Eclipse New Moon in Scorpio is waxing to fruition and will culminate on November 6 at 2:23 pm PST. The effects of the eclipse will now be revealing its destined influences. Despite the foundation of existing and larger cycles, the current influences will become clearly apparent now over the coming week especially if this rare and powerful triple conjunction of Sun, Moon and Venus at 0 degrees Scorpio activated key planets or angles in your chart.

Message: Wow! what a huge amount of Listings you have in the e-Magazine. Well done. You are a wonder surely !! Much appreciation, P.O

It's been fun following your progress from your first year. I enjoy reading your e-magazine and have promoted it in my newspaper column in Salmon Arm. In this issue I learned that Adam McLeod is coming to the Okanagan on Sept. 26 and I plan to be there for his all-day workshop. In the past I have taken his workshops in Burnaby, Vancouver and Victoria. This time he will be just an hour and a half away and he will share experiences since he became a naturopathic doctor, and since he opened a clinic in Vancouver.
