Vegan Banana Protein Pancakes

Looking to add a little oomph to your breakfast? These banana protein pancakes might just fit the bill. This recipe is non Dairy and is gluten free. Native to the Caribbean and Central America, bananas are one of America's favorite fruits. They are rich in potassium - one banana contains 450 mg of potassium, one-fifth of the adult daily requirement - and offer a fair share of magnesium (33 mg), too. In addition, bananas help to strengthen the stomach lining and are good for soothing indigestion.

Vegan Shepherd's Pie

What is a vegan? What is veganism? Veganism is a type of vegetarian diet that excludes meat, eggs, dairy products and all other animal-derived ingredients. Vegan refers to either a person who follows this way of eating, or to the diet itself. That is, the word vegan can be an adjective used to describe a food item, as in, "This curry is vegan", or, it can be used as a noun, as in, "Vegans like cookies, too." What do vegans eat? This is perhaps the most common question about veganism. A vegan diet includes all grains, beans, legumes, vegetables and fruits and the nearly infinite number of foods made by combining them. In addition, many vegan versions of familiar foods are available, so you can eat vegan hot dogs, ice cream, cheese and vegan mayonnaise along with the more familiar veggie burgers. Many foods are associated with veganism, such as soy milk and tofu, but many non-vegans also enjoy tofu, and you certainly don't have to like tofu in order to eat vegan. Vegans also eat many of the same common and familiar every day foods such as a green salad, spaghetti, and chips and salsa which just about everyone eats. For example, foods such as a vegetarian burrito without cheese or sour cream would be vegan, a vegetarian Thai curry made from coconut milk is vegan, pasta with tomato sauce or another non-meat and non-dairy sauce is vegan, and most breads are vegan.

Blueberry and Almond Cake. No Sugar. No Butter. No Flour.

This blueberry and almond cake has no sugar, flour or butter, but it still tastes great! Make it at the weekend and serve with berries and Greek yogurt. Health Benefits of Almonds are a great source of vitamin E, with 25g providing 70 percent of the recommended daily allowance. They contain more calcium than any other nut which makes them great for vegetarians who do not eat any dairy products. Health Benefits of Almonds are that they are high in antioxidants and their potential benefits for the nervous system and for brain health, there is exciting new evidence that blueberries can improve memory. In a study involving older adults (with an average age of 76 years), 12 weeks of daily blueberry consumption was enough to improve scores on two different tests of cognitive function including memory. While participants in the study consumed blueberries in the form of juice, three-quarters of a pound of blueberries were used to make each cup of juice. As participants consumed between 2 to 2-1/2 cups each day, the participants actually received a very plentiful amount of berries. The authors of this study were encouraged by the results and suggested that blueberries might turn out to be beneficial not only for improvement of memory, but for slowing down or postponing the onset of other cognitive problems frequently associated with aging. New studies make it clear that we can freeze blueberries without doing damage to their delicate anthocyanin antioxidants.

With the price of food going up I thought I would try lentils for the first time as they are still a great price. I have read about the many health benefits they give me and my family but I am unsure how to cook them in a meal?

ANSWER by Alexis Costello:

Here is a very simple and quick recipe for a warming vegetarian stew. To soak lentils, simply place them in a shallow dish, cover with water, and leave overnight. Even leaving them for a couple of hours will help. This turns off the enzyme inhibitors present in many nuts, seeds and legumes and makes them much easier to digest. Enjoy!

Simple & Easy Lentil Stew

2 tbsp butter
3 small red potatoes, chopped
1 large yellow onion, chopped
1 carrot
2 cups vegetable broth
2 cups soaked lentils
½ cup peas
½ cup corn
3 cloves garlic
½ tsp cumin
Black pepper to taste

Melt the butter in a large pot over medium low heat. Add the veggies as you chop them, stirring occasionally. Add the broth and the lentils, and bring to a boil. Add peas, corn, and spices and reduce to a simmer. Simmer for 15-20 minutes.

February is an interesting month as the hours of daylight noticeably increase while winter deepens. From Pagan tradition, Imbolc marks mid-winter, the half way point between Winter Solstice and Spring Equinox. Imbolc was renamed Candlemas by the 5th Century, especially in Britain as one of many adoptions of Pagan festivals by the Roman Catholic Church. In our modern era, it is commonly referred to as Groundhog Day.

The New Moon in Aquarius coincides each year with Chinese New Year and the Wood Sheep/Goat/Ram hands off to the mischievous and exciting Fire Monkey. The New Moon in the Pacific Time Zone occurs on February 8th at 6:39 am.
