Dandelion and Tomato Salad

Description:
Pity the American dandelion. In countries across the world the dandelion is considered a delicious vegetable and is consumed with affection–and dandelion has been used for medicinal purposes for centuries. In America, it is most often cursed as an irksome weed and is pulled, poisoned and otherwise generally maligned. Dandelion gets its name from the French "dents de lion", or lion's teeth, which describes the jagged edges on the leaves. The "lion" part might be there due to the fact that the fluffy yellow flowers of the plant resemble a lion's furry mane. Dandelion greens are loaded with beta carotene, the carotenoid phytonutrient that is a precursor to vitamin A. Dandelions help to support digestion. Known to reduce swelling and inflammation. Traditionally used as an anti-viral, treatment for gout, eczema, jaundice, and edema. Function as both mild laxative and gentle diuretic properties to purify the blood and cleanse the system. Dandelion greens have a reputation for bitterness, but they are nicely so, and the bitterness is balanced by a lovely spiciness similar to arugula. Mature greens can get pretty bitter, but this can be tamed by blanching them. The time to harvest dandelion greens is early in the spring, when they are their youngest and before they flower. They can be harvested again in late fall as they loose some of their bitterness after a frost. Look for young dandelions growing in rich, moist soil, making sure not to forage close to roads. They taste fresh and easy to add to any salad! This recipes is so simple to make.


Kale Potato Soup

Description:
This soup could be made using curly leafed kale, other times black kale. The potatoes vary, too, depending on what you have in the pantry. Savory and comforting, this soup is an excellent reminder to appreciate the gifts of winter, even when you're on the cusp of spring. Health Benefits of Eating Kale are many. Kale is being called “the new beef”, “the queen of greens” and “a nutritional powerhouse.” Kale is low in calorie, high in fiber and has zero fat. One cup of kale has only 36 calories, 5 grams of fiber and 0 grams of fat. It is great for aiding in digestion and elimination with its great fiber content. It’s also filled with so many nutrients, vitamins, folate and magnesium as well as those listed below. Kale is high in iron. Per calorie, kale has more iron than beef. Iron is essential for good health, such as the formation of hemoglobin and enzymes, transporting oxygen to various parts of the body, cell growth, proper liver function and more. Kale is high in Vitamin K. Eating a diet high in Vitamin K can help protect against various cancers. It is also necessary for a wide variety of bodily functions including normal bone health and the prevention of blood clotting. Also increased levels of vitamin K can help people suffering from Alzheimer’s disease. Kale is filled with powerful antioxidants. Antioxidants, such as carotenoids and flavonoids help protect against various cancers. Kale is a great anti-inflammatory food. One cup of kale is filled with 10% of the RDA of omega-3 fatty acids, which help, fight against arthritis, asthma and autoimmune disorders. Kale is great for cardiovascular support. Eating more kale can help lower cholesterol levels. Kale is high in Vitamin A.Vitamin A is great for your vision, your skin as well as helping to prevent lung and oral cavity cancers. Kale is high in Vitamin C. This is very helpful for your immune system, your metabolism and your hydration. Kale is high in calcium. Per calorie, kale has more calcium than milk, which aids in preventing bone loss, preventing osteoporosis and maintaining a healthy metabolism. Vitamin C is also helpful to maintain cartilage and joint flexibility Lastly, Kale is a great detox food. Kale is filled with fiber and sulfur, both great for detoxifying your body and keeping your liver healthy. Chop Kale finely into your next salad, steam or use in soups.

QUESTION: What's the difference between sell by dates, eat by dates, etc.? Is there even a difference, or is this always the expiration date?

ANSWER: Dear Reader,

With all these vague, different, and vaguely different terms out there like the ones you listed, it's no wonder that this "dating game" can be so confusing. Here's a quick guide to navigating the alphabet (and number) soup you may find stamped all over your food:

Use or lose: The "use-by," "best if used by (or before)," and "quality assurance" dates tell you the last date that the product will be at its best flavor and highest quality. This doesn't mean the food is unsafe to eat after that date, but it may taste better on or before the given date.

Expired and retired: The term "expired by" or "expiration date" is the latest date that the food should be eaten or used. Except, that is, for federally graded eggs (the kinds you see stamped with A, AA, etc.). If these eggs are purchased before the expiration date, you can use them for the next three to five weeks starting from the time you bought them.

No use in crying over pulled milk: "Sell-by" or "pull" is printed on packages to tell the retailer when the last day to sell the product should be. This date factors in the time that the food will be stored and used at home. You should buy things before this date, but you don't have to finish them before this date. This is a common case with milk, which can be used for as many as seven days after its sell-by date.

Pack it up: "Packed on" or "package date" indicates when the food was processed or packaged. Although this isn't an indicator of the safety or quality of the food, it can tell you which foods are fresher than others. This is often seen on meat products.

Speaking in code: In case of a recall, the producers and manufacturers use the "coded date" to trace foods across state lines. It's usually a series of letters and/or numbers and has no bearing on the freshness, quality, or safety of the food.

Besides buying and using foods by the appropriate dates, it's also important to follow proper storage and handling guidelines to ensure that food will not spoil and make you sick. For instance, raw meat should be cooked and consumed within two days after purchase or be frozen if you're thinking about keeping it longer than that. Ground meat should not be frozen for longer than three months because it can spoil more quickly due to the extra surface area for bacteria to grow on. Even foods that have been cooked can cause illness if they're kept out or stored improperly.

The Power of Intention by Dr. Wayne W. Dyer

The book The Power of Intention is a book that explores intention. Not as something you do, but as an energy you are a part of. A field of energy you can access to begin co-creating your life!

Dyer says that generally, intention is viewed as a strong kind of determination, moving one to succeed at all costs by never giving up on an inner picture. An attitude that combines hard work with a drive toward excellence that will bring success.

Dr. Dyer has researched intention in a different way, as a force in the universe that allows the act of creation to take place. Saying that we are all intended here through the invisible power of intention. This is the first book to look at intention this way!

A form of evidence that anything we can conceive of in our minds - while staying in harmony with the universal all-creating Source - can, and must come to pass.

May days in the Year of the Snake and in the midst of an Eclipse Season together constitute an exciting and dramatic atmosphere! Ask around and you will hear stories of change, endings and so on from just about everyone. The metaphor of shedding skins will likely fit very well. The good news is that it implies renewal. Yet, the process of completion and of entering the unknown is usually a source of much added stress. With the Moon in its last quarter and in the wake of the Scorpio Lunar Eclipse the pace and extent of these transformations are accelerating. As ever, the answer is to tune-in, adapt and strategically cooperate. Taking a pro-active verses reactive approach is ideal. This is where it helps to pause and look at the map.
