Tuscan Leek, Potatoe & Bean Soup

Description:
Welcome those crisp winter days with a pot of hearty Tuscan bean soup. Leeks are a unique combination of flavonoids and sulfur-containing nutrients, the allium vegetables belong in your diet on a regular basis. Like their allium cousins, onions and garlic, let leeks sit for at least 5 minutes after cutting and before cooking to enhance their health-promoting qualities. A good source of dietary fiber, leeks also contain goodly amounts of folic acid, calcium, potassium, and vitamin C. Easier to digest than standard onions, leeks have laxative, antiseptic, diuretic, and anti-arthritic properties. Leeks contain many noteworthy flavonoid anti-oxidants, minerals, and vitamins that have proven health benefits. Leeks are low in calories. 100 g fresh stalks contain 61 calories. Further, their elongated stalks provide good amounts of soluble and insoluble fiber. Laboratory studies show that allicin reduces cholesterol production by inhibiting HMG-CoA reductase enzyme in the liver cells. Further, it also found to have anti-bacterial, anti-viral and anti-fungal activities. Allicin also decreases blood vessel stiffness by release of nitric oxide (NO); thereby bring reduction in the total blood pressure. It also blocks platelet clot formation and has fibrinolytic action in the blood vessels, which helps decrease overall risk of coronary artery disease (CAD), peripheral vascular diseases (PVD), and stroke. Leeks are great source of minerals and vitamins that are essential for optimum health. Their leafy stems indeed contain several vital vitamins such as pyridoxine, folic acid, niacin, riboflavin, and thiamin in healthy proportions. 100 g fresh stalks provide 64 µg of folates. Folic acid is essential for DNA synthesis and cell division. Their adequate levels in the diet during pregnancy can help prevent neural tube defects in the newborn babies. In addition, leeks are one of the good source of vitamin A (1667 IU or 55% of RDA per 100 g) and other flavonoid phenolic anti-oxidants such as carotenes, xanthin, and lutein. They also have some other essential vitamins such as vitamin C, K, and vitamin E. Vitamin C helps body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals. Further, its stalks have small amounts of minerals such as potassium, iron, calcium, magnesium, manganese, zinc, and selenium. Often overlooked in leeks is their important concentration of the B vitamin folate. Folate is present in leeks in one of its bioactive forms (5-methyltetrahydrofolate, or 5MTHF) and it is present throughout the plant (including the full leaf portion, not only the lower leaf and bulb). Fresh leeks should be stored unwashed and untrimmed in the refrigerator, where they will keep fresh for between one and two weeks. Wrapping them loosely in a plastic bag will help them to retain moisture. Tips for Preparing Leeks - Cut off green tops of leeks and remove outer tough leaves. Cut off root and cut leeks in half lengthwise. Fan out the leeks and rinse well under running water, leaving them intact. Cut leeks into 2-inch lengths. Holding the leek sections cut side up, cut lengthwise so that you end up with thin strips, known as the chiffonade cut, slicing until you reach the green portion. Make sure slices are cut very thin to shorten cooking time. Let leeks sit for at least 5 minutes before cooking. With a more delicate and sweeter flavor than onions, leeks add a subtle touch to recipes without overpowering the other flavors that are present. Although leeks are available throughout the year they are in season from the fall through the early part of spring when they are at their best.


Vegetarian Coconut Chili

Description:
This chili has just a hint of coconut to add a tasty twist. If you want a stronger coconut flavour simply replace the vegetable stock with coconut milk. For much of the last few decades, coconut oil got a bad rap in mainstream media. Critics said it was high in cholesterol and fat, and so many people did not include in in their daily diets. But island populations around the world have celebrated the coconut for centuries for its health benefits, using the meat juice, milk and oil the fruit provides in everything from cooking to disease prevention. Modern medicine is now jumping on the bandwagon and releasing its own findings on the health benefits of coconut.


Almond Butter & Millet Shortbread Cookies

Description:
These cookies can also be made with any of your favorite nut butter! Basic grain in Africa and Asia, millet fits perfectly in your diet. Rich in fibres and minerals, this tasty flour is easy to cook and digest. Substitute 1/4 cup millet flour to the same amount of plain flour for your baking (cookies, pancakes, breads, etc). Another great alternative to gluten! Some health benefits of millet flour are: Rich in magnesium Helps your nervous and immune system to work well. Provides healthy bones and teeth. QUESTION: Everyone wants to "help" in the kitchen at Christmas time, but sometimes this is anything but helpful. What's the polite way to deal with all this eager "help?"

ANSWER: Embrace the moment! No, not everyone will know your kitchen or perhaps "live up to your standards," but that's not what's important on this day. Holidays are a time when people come together to enjoy each other's company as well as good food. Make your kitchen an easy place for people to help out. Create work stations for different dishes. "Stock" the workstation with a copy of the recipe, the required utensils, and ingredients. This will keep many hands busy at once without the hassle of "where do you keep the --?", or "I need -". Then relax and enjoy the camaraderie that kitchens are famous for.



QUESTION: We're invited to a friend's home for Christmas. What is the proper etiquette for bringing a hostess gift?

ANSWER: Sharing a meal with others is the core spirit of the holidays. Discuss with your hostess ahead of time what you might bring to contribute to the occasion. Have a few suggestions ready; that will help your hostess by knowing what you're comfortable with making or bringing. If your hostess insists "just bring yourself," it's still appropriate to bring a gift of some sort. A bottle of wine or a beautifully packaged gourmet food item for the pantry is always gratefully received.

Tip of the Week:

Sagittarius is symbolic of seeing the big picture. In light of the rapidly encroaching 12-21-2012 end date of the Mayan Long Count Calendar, it helps to see it from a wider angle. Hardly an arbitrary fact, the Sun is currently in the process of crossing the Galactic Center, from the earth’s perspective. This only occurs once about every 26,000 years! Due to the size of the Sun against the backdrop of the Galactic Center, it takes 36-42 years to fully cross over that point. This crossing began in the late 70’s and will continue for at least 3-4 years yet. This time period has been called era 2012. Some people have been lead to believe that this will bring about the end of the world and have, at worst, sensationalized this with a wide array of disaster scenarios. Yet, if we consider the time period that constitutes Era 2012, we can actually see that the world has and continues to change so dramatically that we are actually on the threshold of a ne...
