Flavia Aarden-Kilger is a gemmologist and people manager. After working in the jewellery and diamond industry for 15 years, she got into fair trade by chance. Her experience in the jewellery industry has taken her to Asia where she has given jewellery workshops to Tibetan refugees and producers in New Delhi and Nepal so that their jewellery could be sold in thousands of stores in Europe and North America according to western standards. While living in Europe, Flavia has been a frequent speaker at highschools, universities and EU initiatives advocating fair trade. Working for Fair Trade Brokers, which imports fair trade certified food products and fair trade certified fruit juices to Canada, she is heavily involved in spreading the fair trade word. She is also involved in setting fair trade standards for the jewellery industry via the Madison Dialogue. VEGETARIAN DIETS AND IRON
Are you a vegetarian or mostly a vegetarian? Our registered dietitian recommends consuming plenty of iron-rich plant foods such as lentils, kidney beans, black beans, dark green leafy vegetables, dried fruit and whole grains. Iron-enriched products such as cereals and breads are also good sources. To enhance iron absorption, consume vitamin C-rich foods at the same time you eat iron-containing foods. These include strawberries, green peppers, tomatoes, broccoli and citrus fruits. By following these simple guidelines, most non-meat eaters will get enough iron.

Salsa Summer Fresca

Description: Tomatoes are best in the summer months. Although tomatoes are now available year-round, the truly wonderful qualities of tomatoes are the best when they are in season from July through September.
In the area of food and phytonutrient research, nothing has been hotter in the last several years than studies on the lycopene in tomatoes. This carotenoid found in tomatoes (and everything made from them) has been extensively studied for its antioxidant and cancer-preventing properties. The antioxidant function of lycopene-its ability to help protect cells and other structures in the body from oxygen damage-has been linked in human research to the protection of DNA (our genetic material) inside of white blood cells.
Prevention of heart disease, Colon Health, and in Prostate Health has been shown to be another antioxidant role played by lycopene.
Tomatoes have been shown to be helpful in reducing the risk of prostate cancer.
With fresh ingredients, salsa has the perfect combination of spicy and refreshing tastes. Paired with some chips or added to a wrap, salsa is a great, healthy snack.
