-------Nollaig Shona Duit (Happy Holidays in Irish Gaelic) and Winter Solstice

welcomeChristmas holly and the approach of the holiday traditions don’t hold the same meaning for everyone. For those of us keenly aware of the cycle of the seasons, the approach of the holidays means the Winter Solstice is coming.
Search for the roots of today's Holiday traditions and you will find your way back to the ancient different culture traditions and a Celtic festival of ‘Alban Arthuan’, held during the Winter Solstice on December 21. To read more about other traditions and recipes
Celtic mythology is strongly linked to holly trees. Holly tree sprigs were also brought into their dwellings during the cold-weather months in the belief that they afforded shelter to the fairies, those tiny spirits of the forest. Every year, my mother heads up the Wicklow Mountains, in Ireland to her friend ’s farm, to find the perfect large branch of holly, to take home. This is her Christmas tree and it is so beautifully decorate with bright red berries that are highlighted by soft white lights. To read more the full editor letter

One of the nicest Christmases that I remember was when the whole family went for a lovely walk after dinner. Once we all got going, we all agreed it was the best part of the holiday. This year, why not consider heading out for a post dinner walk, buying a free range turkey, change to LED outside lights, use recycled wrapping paper, recycle all used gift-wrap and boxes or send some tree-free cards made from Kenaf plants (see your local health store). Try out some of our new healthy recipes or make some plans to spend some time enjoying a walk with family or a friend. It is a great way to spend then holidays, it is free, healthy and a lot of fun.

OK In Health would like to wish all our members a wonderful Happy and Healthy Holiday during this festive time, in a way that is special to you. We would like to thank you all for your tremendous support for this website and we look forward to sharing the new year with you, in health and happiness.

Nollaig Shona Duit, From Maria Carr and the OKinHealth team.

Grand-kids coming over? or are you looking for a healthy snack idea?
Try banana crunch pops. Place a small banana on a popsicle stick, coat with non fat or low fat vanilla yogurt, roll in crisped rice cereal and set on waxed paper. Freeze overnight. Enjoy a low fat, nutritious and cool snack tomorrow!

The Power of Side Dishes  -   Not all side dishes are equally healthy. It all depends on what you choose. Sides of coleslaw (as many as 11 grams of fat), biscuits, creamed vegetables, or macaroni and cheese can add lots of calories and fat to your meal. Dieticians recommends sides such as carrot raisin salad, vegetarian beans, salad with low-fat dressing, steamed veggies, and fruit salad instead. Increased activity can also compensate for rich indulgences.

Hot peppers - According to registered dieticians, chilli peppers are a good source of vitamins A and C. The hottest peppers include anaheim, ancho, cayenne, casabel, habanero, jalapeno, and serano. To avoid accidental "pepper pain," wear gloves or wash hands immediately after handling them. Avoid all contact with the eyes or nasal membranes after touching peppers. And thoroughly wash all surfaces the peppers have touched.

Fat Free Cookies  Don't be fooled by the term "fat free" on a food label.  While there are a myriad of fat free products on the market today, many of them are loaded with calories and concentrated sugars.  Many fat free versions of foods contain only a few less calories per serving than their fatty counterparts.  Five fat free cookies at 50 calories each still adds up to a significant caloric intake.  Be a smart shopper.  Compare calorie and fat contents when choosing products and practice moderation when eating high sugar or high fat foods.

Caffeine   Besides making it hard to fall asleep, too much caffeine can cause stomach upset, muscle tension and nervousness. To find out how much caffeine you are getting, try keeping a journal. Moderate caffeine intake is about 3 cups of coffee (roughly 300 mg of caffeine) per day or a like amount from other drinks and foods. If you think you may be drinking too much caffeine, cut back by half a cup per day, not all at once. This usually avoids severe caffeine withdrawal headaches.

Carrots Bugs Bunny was right - carrots are good for your eyes. Carrots are a rich source of beta-carotene. When converted to vitamin A in the body, this nutrient helps to maintain proper vision. This includes adjusting to night vision, too. Some studies have linked beta-carotene with cataract prevention. Along with carrots, rich food sources of beta-carotene include dark red, yellow and orange fruits and vegetables, such as sweet potatoes, red bell pepper and mango.

Wellness Tips

Flu Prevention
The Centers for Disease Control and Prevention recommend the following to help prevent the flu. Avoid close contact when someone is sick. If possible, stay home from work, school, and errands when you are sick. Cover your mouth and nose with a tissue when coughing or sneezing. Help protect yourself from germs, wash your hands often. Avoid touching your eyes, nose or mouth. This reduces your chance of picking-up unwanted germs.

Chicken Soup
It's true. Chicken soup really does help to relieve the symptoms of a cold. The hot vapors help break up congestion, making it easier for you to breathe. Vegetable soup should also do the trick if you are a non-meat eater. Don't forget to drink plenty of fluids. Avoid caffeinated beverages which can dehydrate the body.

At your Desk Calf Exercise
Good calf exercises can be very simple. Our fitness experts say you should consider the following: 1) Lift and lower both heels while keeping the balls of your feet planted firmly on the floor; and 2) Work the opposing muscles by lifting and lowering the balls of your feet with your heels on the floor.

Salt Substitutes
Use salt substitutes sparingly, if at all, unless you consult with your doctor. Some salt substitutes contain very high levels of potassium. This may be unhealthy for those with certain medical conditions. Instead of relying on a salt substitute, try seasoning foods with pepper, flavorful herbs and spices.

Give Barley a Try
Looking for a whole grain to add variety to your dinner plate? Willing to try a new flavor? Consider barley. According to our registered dietitian, one half cup (cooked) provides significant amounts of several nutrients, including folate, iron, zinc, protein, and fiber. You can also use barley in soups, stuffed peppers, pilaf, and hot or cold salads. It is readily available at most supermarkets.

Size matters!
Don't forget about portion size when dining out. A 3.5 oz. hamburger made with extra lean ground beef, cooked to medium, contains about 250 calories, 16 grams of fat, 6 grams of saturated fat and 82 mg of cholesterol. Upgrade that to a half-pound of meat and you are looking at almost 600 calories, 36 grams of fat, 13 grams of saturated fat and 185 mg of cholesterol. What a whopping difference! Stick with smaller portions of meat. Three ounces is about the size of a deck of cards.

Soy sauce
Did you know that low sodium soy sauce might still contain 600 mg of sodium per tablespoon? That's about 25% of the -recommended daily intake. Remember - a reduced sodium food, while often better than the original, is not always a low sodium food.

Breakfast Fast Food
Fast food breakfasts can be killers. According to our dietitian, some egg and sausage biscuit meals contain as many as 600 calories and 40 grams of fat! An English muffin with egg and Canadian bacon, although not "lite", is clearly a better option. It has about 385 calories and 20 grams of fat. In either case, try for balance in the rest of your day and week. Include plenty of fruit, vegetables and physical activity.

Binge Eating Disorder
Binge eating disorder or BED has recently been named the most common eating disorder in this country. Symptoms include out of control eating, eating when not hungry, being embarrassed about the amount of food consumed, and feeling depressed after eating. Many who suffer with BED feel extremely uncomfortable approaching others about it. However, BED can lead to serious health problems when left untreated. A growing number of health professionals are able to help or appropriately refer those with BED.

Potassium
Potassium is essential for many reasons. These include blood pressure regulation and normal heart function. However, too much as well as too little can cause problems. Thus the National Institutes of Health recommend getting potassium from food, avoiding supplements except at your doctor's direction. Good food-based sources include bananas, yogurt, spinach, lentils, raisins, and acorn squash .

Plants & Alzheimer's
Phytochemicals (compounds from plants) may play some role in reducing the risk of Alzheimer's as well as cancers and heart disease. To increase your intake, include a wide variety of plant based foods like olives, green and black tea, soy, flaxseed, blueberries, cherries, pears, grapes, spinach, strawberries and lentils in your diet.

Cross-Training to Avoid Stress Fractures
A stress fracture is a small crack in a bone's outer layer. It can develop when exercise stresses the same bones, ligaments, tendons and muscles over and over again. A good example is your foot striking the ground during jogging. Cross-training (two or more types of exercise during one workout, or two different exercises on different days) can often prevent stress fractures or give them a better chance to heal.
